Choux Pastry

Ingredients:

  • 225g boiling water
  • 100g butter
  • 5g salt
  • 5g sugar
  • 180g flour
  • 260g egg

Method:

  1. Bring 225g of water to a boil, add in 100g butter, 5g sugar and 5g salt. Melt together and cook until a rapid boil
  2. Add in 180g flour and cook out the flour until a crust forms on the bottom of the e pot.
  3. Transfer to stand mixer and beat until no steam remains.
  4. Add 260g of eggs one at a time and beat on high until incorporated.
  5. Pipe with star tip onto tray.
  6. Bake at 180c for 40-45min.
  7. Cool and fill

Tips:

  • Beat mixture before adding the eggs until NO steam is left, key to a good texture.
  • Star tipped piping big ensures even rise in the oven.
