Ingredients:
- 225g boiling water
- 100g butter
- 5g salt
- 5g sugar
- 180g flour
- 260g egg
Method:
- Bring 225g of water to a boil, add in 100g butter, 5g sugar and 5g salt. Melt together and cook until a rapid boil
- Add in 180g flour and cook out the flour until a crust forms on the bottom of the e pot.
- Transfer to stand mixer and beat until no steam remains.
- Add 260g of eggs one at a time and beat on high until incorporated.
- Pipe with star tip onto tray.
- Bake at 180c for 40-45min.
- Cool and fill
Tips:
- Beat mixture before adding the eggs until NO steam is left, key to a good texture.
- Star tipped piping big ensures even rise in the oven.
